Perfect Roast Potatoes
      Ingredients : Maris Piper potatoes, goose fat

Method :

1. Have your guests in close proximity to the dining table                                                                        . 

    Perfect roast potatoes cannot wait for the diners!

2. Heat a layer of goose fat to smoking in the oven (fan oven takes about 10 mins) - must be                                                     

    smoking.

3. In the meantime boil peeled Maris Piper, or equivalent, potatoes for exactly 10 minutes.

4. Drain off the water and allow to dry a little before shaking vigorously to roughen up the

    potatoes.

5. Add the potatoes to the smoking fat using long handled tongs.  Use a second tray rather

    than overcrowd the potatoes.

6. Baste immediately with the smoking oil - take great care not to be burnt!

7. Cook in the oven (220C) for 20 mins.

8. Turn each potato and baste

9. Cook for a further 20 minutes or until perfectly golden and then remove to a serving bowl.

10. Serve immediately with the plated accompaniments.
